Creamy Asparagus Stuffed Chicken {Paleo, Whole30, Nondairy}
Ingredients
- 6 chicken breasts
Seasoning
- 1 tsp black peppercorn
- 1 tsp Maldon Sea Salt Flakes
- 1 tsp Everything but the Bagel Sesame seasoning
- 1 tsp Trader’s Joe’s Green Goddess Seasoning Blend
- 1 tsp Herbes de Provence
Stuffing:
- 1 shallot
- 1 cup asparagus
- 1/3 cup scallions
- 4 garlic cloves
- 1/3 cup Violife Mozzarella Shreds
- 1 tbsp Trader Joe’s chili onion crunch
- 7.05 oz Violife Just Like Cream Cheese
- 5 Mature Cheddar Style Slices
- 4 tbsp avocado oil
Instructions
- Using a mortar and pestle or food processor, combine black peppercorns, maldon salt, Everything but the Bagel Sesame seasoning, Trader Joe’s Green Goddess Seasosning, and herbes de provence to create seasoning. Set aside.
- In a food processor, combine shallot, asparagus, scallions, garlic cloves, Violife mozza shreds, TJ’s chili onion crunch (optional), and Violife cheddar cheese to create stuffing.
- Add stuffing into a ziplock to create a piping bag. Cut the tip one edge for piping.
- Using a sharp knife, slice an inch and a half through to create a pocket for the stuffing. Pipe the stuffing in.
- Season both sides of chicken breast generously.
- In a large pan, heat avocado oil to medium-high heat.
- Cook stuffed chicken for 6 minutes on each side.
- Using the same skillet or baking pan, heat asparagus stuffed chicken in the oven for 35-40 minutes at 425°F.
- Plate and serve!
