Pork Chop Cooked in 3 Ways:

1. Air Fryer Pork Chops

Alright, you’re in the mood for some airfried recipes because it almost acts as a microwave but a healthier version! Less oil and no guilt because you didn’t reach for some frozen Marie Calendar dinner. The last thing you want at the end of the day is a disappointment.

Here’s how it works: 1/2 to 1-inch bone-in pork chops cook in an air fryer for 12 minutes at 385°F. Start with 12 minutes and flip halfway through. Use a thermometer and once you reach an internal temperature of 145°F, don’t cook it any longer. If it is roughly 140°F, that is okay. Set it aside and add it to the mushroom sauce later to simmer.

2. Pan-Seared Pork Chops

Sometimes, the nice brown-seared color and sizzle can be therapeutic to a home chef (like me). I enjoy the sound and it’s therapy to my ears! So if this is you, you’ll be happy to add this to your one-pan meal recipes.

Here is a tip for searing pork chops to perfection: always turn the stovetop on to medium heat. Make sure the pan is hot before you add olive oil or avocado oil so it does not burn. Once you’ve added the pork chops, sear both sides for 6 minutes each. Use a thermometer and once you reach an internal temperature of 145°F, don’t cook it any longer. If it is roughly 140°F, that is okay. Set it aside and add it to the mushroom sauce later to simmer.

3. Oven-Baked Pork Chops

I think by now, you will learn that the magic number is 12 minutes. If you choose to bake the pork chops in the oven because you love cooking this way, you’ll find that this is the juiciest way to achieve a tender pork chop!

Just bake the boneless pork chops at 350°F for 12 minutes or 375°F for 12 minutes if using bone-in pork chops. Either way, always check for internal temperature to reach 145°F.

The Best Mushroom Pork Chop Sauce

Growing up in a Filipino household, mushroom sauce or gravy goes well with mashed potatoes or rice along with pork chop or a hamburger patty. We call it Filipino Burger Steak with Mushroom Gravy. What Makes the Mushroom Sauce Paleo, Whole30, and AIP-friendly?

1. Whole Ingredients and natural herbs: shallot, garlic, white mushrooms, tarragon, chives, and thyme.

2. Gluten-free option: tapioca starch or flour instead of all-purpose flour. With only 1 teaspoon, you can thicken the sauce to make a gravy!

3. White wine reduction: the process of deglazing the pan and allowing the white wine to reduce open up the aroma and natural sweetness will not make your blood sugar skyrocket.

4. Grass-fed Beef Broth or Beef Bone Broth: carries anti-inflammatory properties that are gut-healing. I use Pacific Foods Organic Beef Broth and more recently Kettle & Fire Beef Broth.

5. Soy-Free Alternative: Coconut Aminos by Big Tree Farms is my favorite! 1 tablespoon is all you need to add just a kick of umami to elevate your Pork Chop Mushroom Sauce!

6. Go Dairy-Free with Ghee Butter: it adds a depth of creamy flavor without adding cream! Look for grass-fed and clarified butter!

Pork Chops in Mushroom Sauce - 3 Ways (Air-Fry, Pan-Fry, and Oven-Baked)

Ingredients
  

Seasoned Pork Chops

  • 4 bone-in center cut pork loin chops
  • 2 tbsp olive oil
  • 3 tsp salt
  • 2 tsp garlic powder

Mushroom Sauce

  • 1 shallot diced
  • 2 garlic cloves minced
  • 1/3 cup white wine
  • 8 oz. white mushrooms
  • 1 tbsp coconut aminos
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 cup beef broth
  • 1 tbsp ghee butter
  • 1 tsp tapioca starch
  • 1 tsp tarragon
  • 1 tbsp thyme or chives
  • 1 tsp paprika omit on AIP

Instructions
 

Airfried Pork Chops

  • Season pork chops with oilive oil, salt to taste, and garlic powder. Preheat airfryer to 385°F.
  • Air fry pork chops at 385°F for 12 minutes. Flipping halfway through.

Pan-Seared Pork Chops

  • Season pork chops with salt to taste and garlic powder. Set pan to medium heat and wait for pan to be hot before adding olive oil.
  • Add pork chops and cook each side for 6 minutes each or until temperature reaches 145°F.

Oven-Baked Pork Chops

  • Season pork chops with oilive oil, salt to taste, and garlic powder. Preheat oven to 350°F.
  • Bake pork chops at 350°F for 14 minutes. Flipping halfway through until it reaches 145°F.

Mushroom Sauce

  • In a medium heat pan, add olive oil and saute shallots and garlic until fragrant and shallots are translucent.
  • Deglaze with white wine and let it reduce for 2 minutes before adding mushrooms.
  • Add coconut aminos, beef broth, ghee butter, and season with salt and garlic powder to taste. Stir and cook for 3 minutes. Set aside 1/4 cup of boiling broth to dissolve tapioca starch in. Add this thickener back to the mushroom sauce and simmer for 3 minutes on low heat.
  • Add pork chops into Mushroom Sauce to incorporate flavors or serve separately. Garnish with tarragon and chives or thyme. For spice, add paprika but omit on AIP.
