The Honey Mustard Cauliflower Salad Concoction

Whenever I envision the perfect salad, I picture myself making it in 15 to 20 minutes–quick and easy. I imagine a smell and a taste of a sweet and mildly tangy dressing and a premade protein I can just toss all together. It’s not quite the Ultimate Caesar Salad.

The Honey Mustard Dressing

Since my journey through AIP Paleo, I’ve learned to really look at ingredients. A bottled salad dressing at Whole Foods is just as unhealthy as eating McDonald’s french fries. It’s often packed with preservatives and things the majority cannot pronounce. We often don’t make the time to do our research and when we do, we are faced with the dilemma of choosing convenience over health.

This recipe saves you time and money because the ingredients are pantry staples you already have! Horseradish adds a spicy punch with the dijon mustard. Coconut aminos, raw honey, and apple cider vinegar are key ingredients to everyday cooking for my fellow Paleo foodies. It’s lower in sodium, and glycemic index, and serves as a healthy alternative to soy sauce and sugar. Instead of mayonnaise (for my fellow friends who are allergic to eggs), I added in a probiotic alternative: coconut yogurt by Cocoyo! It’s my favorite one adds the perfect creamy tang to any sauce.

The Cauliflower Salad

Roasted cauliflower is best for this recipe but if you’re short on time, you’d enjoy it just as much. Add in sauteed peas, garlic confit, and spinach along with the roasted cauliflower then you are all set! It’s packed with iron and antioxidants so it’s a nutrient-dense lunch!

What if I didn’t plan on making the Achiote Chipotle Salmon with the Cauliflower Salad?

Lucky for you, I’m a big proponent of personalized diet plans. If you didn’t get the chance to make the Achiote Chipotle Salmon, don’t sweat it. Mix in some leftover chicken, ahi tuna, or even sardines and it will taste fantastic!

Honey Mustard Cauliflower Salad with Achiote Chipotle Salmon

Ingredients
  

  • 1 lb Achiote Chipotle Salmon
  • 1 cauliflower head cut into florets
  • 3 tbsp olive oil
  • 1 tsp black pepper
  • 1 tsp salt
  • 5 cloves garlic confit
  • 1 cup peas
  • 3 cups spinach loosely packed
  • 1/4 cup chives
  • 1/4 tsp garlic

Honey Mustard Dressing

  • 1/4 tsp horseradish
  • 3 tsps dijon mustard
  • 2 tsps coconut aminos
  • 3 tbsp coconut yogurt
  • 3 tbsps raw honey
  • 1 tsp apple cider vinegar

Instructions
 

  • Preheat the oven to 375° F. In a medium-sized bowl, combine cauliflower florets, olive oil, salt, and pepper. Place in a sheet pan and bake for 25 - 30 minutes, until tender.
  • In a skillet, heat a tablespoon of olive oil then saute garlic confit for 2 minutes. Add the peas and spinach and cook for 10 minutes on low-medium heat. Season with salt, garlic powder, and chives.

Honey Mustard Dressing:

  • In a small bowl, combine horseradish, dijon mustard, coconut aminos, coconut yogurt, raw honey, and apple cider vinegar. Mix until well combine and set aside in the fridge.
  • To serve, toss together the roasted cauliflower, sauteed spinach and peas, and honey mustard dressing. Using a fork or wooden spoon, break apart the Achiote Chipotle Salmon then mix well into the salad. Serve hot or cold and enjoy!
