EASY GREEN GODDESS CHICKEN JICAMA TACO

This quick and easy Green Goddess Chicken Jicama Taco is light, refreshing, and delicious! It’s the perfect go-to lunch. Just pack some diced cucumbers, avocado, chicken, jicama wrap and shredded lettuce then your done!

The last thing you want is to go hungry at work or get bored at home and order fast food. This is the easiest meal prep you can gift yourself in the present.

Where can I get the best Green Goddess Dressing?

I first fell in love with Trader Joe’s brand but I recently discovered Primal Kitchen at Sprouts. The latter is Paleo, Whole30, Keto, and AIP-friendly. Be careful to try other brands and make sure to read the ingredient list to follow your personal food intolerance. To add more flavor, get the Green Goddess Seasoning.

Can I make the Green Goddess dressing Paleo, Whole30, or AIP at home?

Of course! I have not attempted to make it myself as I wanted a quick meal prep option to curb any unnecessary cravings. However, this Green Goddess Dressing by Stacie Hassing from The Real Food Dietitians is Vegan, Paleo, Whole30, and AIP approved.

Do I have to use jicama wraps?

Although these jicama wraps from Trader Joe’s are truly divine, I understand that everyone has their preferences. To keep it AIP, I would suggest swapping the jicama wraps with cassava tortillas by Siete or use coconut wraps.  If not, you can always make it into a taco bowl!

Here’s My Advice:

The key to completing Whole30 or AIP programs and having a sustainable Paleo lifestyle is to prepare for your peak craving moments. For instance, I have often found myself returning to my old behaviors during menstrual cycle, in times of stress, boredom, and coming home from work. By carving out time to plan for the week and meal prepping, you will have a higher chance of making better decisions during a busy week. Also, there is such thing as planning for your procrastination! As for me, by having the green goddess dressing in the fridge, base of a salad, and protein prepped and ready for me to use helps tremendously.

Trader Joe's Inspired Green Goddess Chicken Jicama Taco

Ingredients
  

  • 2/3 cup Green Goddess Trader Joe's Dressing
  • 1 tbsp lemon
  • 1 tbsp Green Goddess Seasoning
  • 1 Rotisserie Chicken
  • 6 Trader Joe's Jicama Wraps
  • 1 cucumber diced
  • 3 avocados diced

Instructions
 

  • Dice cucumbers and avocados
  • Mix Green Goddess Trader Joe's dressing and lemon juice with cucumber avocado salad.
  • Season with salt, pepper, and Green Goddess seasoning.
  • Shred or dice rotisserie chicken.
  • Assemble jicama taco with shredded chicken and cucumber avocado salad.
  • Garnish with Green Goddess seasoning.
